Honest version: walk to the counter, pay 150 THB, get in the car. Chiang Rai is one of the few Thai airports where the official rate is genuinely fair, and haggling or app-hopping saves you nothing.
Mae Fah Luang – Chiang Rai International Airport is small enough that you cannot really get lost. After baggage reclaim, the public taxi desk sits on the ground floor near Entrance 3. You tell them the hotel, pay the flat 150 THB, and they walk you to a car.
The rate covers anywhere inside the city. If your hotel is well out of town — up towards Mae Fah Luang University, say, or out on the Mae Sai road — confirm the price at the desk before you set off, because you may fall outside the flat-rate zone.
Grab operates at the airport and app cars collect from Entrance 1, not the taxi rank. Quotes move with demand: early morning and late evening they often sit above the counter price, and at quiet times they come in a little below it.
It is worth opening the app while you wait for your bag simply to see the number. If it is under 150 THB, take it; if it is not, the counter is quicker than waiting for a driver to accept.

Plenty of people land in the morning and want the day to start immediately rather than checking in first. That works here: the airport sits on the north-east side of town, which is the same direction as Mae Sai, Doi Tung and the Golden Triangle.

The counter is cash. There are ATMs in the terminal, but arriving with a few hundred baht already in your pocket saves a queue.
The return trip is the one people misjudge. Grab from the city to the airport is usually easy, but at 05:00 for a first flight it is not guaranteed. Ask your hotel to book a car the night before — it costs about the same and removes the risk entirely.
